Banana Cupcakes

Soft, fluffy & delicious banana cupcakes to be enjoyed at tea time!
Time: 1 hour
Makes: 6 large cupcakes or 12 small cupcakes
Ingredients:
Dry:
1 ½ cups of oat flour
1 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
Wet:
¼ cup of coconut oil
1 cup of water
2 mashed bananas
1 teaspoon vanilla essence
Icing:
1 cup icing sugar
¼ cup of vegan margarine
1 teaspoon vanilla essence
Directions:
- Preheat your oven to 180 °C and spray your cupcake tray.
- In your mixing bowl, add in all of the dry ingredients and mix. Add in the wet ingredients and combine.
- Pour the mixture into your cupcake tray.
- Place in the oven to bake for 25-28 minutes or until a knife comes out clean when inserted into a cupcake.
- Once finished baking, remove from oven and allow to cool.
- Once completely cooled, start mixing together your icing by sieving your icing sugar into a mixing bowl. Add in the remaining ingredients and mix with an electric hand mixer until you have a creamy and smooth icing.
- Ice your cupcakes and enjoy!
