Banana Cupcakes

Banana Cupcakes

Soft, fluffy & delicious banana cupcakes to be enjoyed at tea time!

Time: 1 hour
Makes: 6 large cupcakes or 12 small cupcakes

Ingredients:
Dry:
1 ½ cups of oat flour
1 cup white sugar
1 teaspoon baking powder
1 teaspoon baking soda
Pinch of salt
Wet:
¼ cup of coconut oil
1 cup of water
2 mashed bananas
1 teaspoon vanilla essence
Icing:
1 cup icing sugar
¼ cup of vegan margarine
1 teaspoon vanilla essence

 

Directions:

  1. Preheat your oven to 180 °C and spray your cupcake tray.
  2. In your mixing bowl, add in all of the dry ingredients and mix. Add in the wet ingredients and combine.
  3. Pour the mixture into your cupcake tray.
  4. Place in the oven to bake for 25-28 minutes or until a knife comes out clean when inserted into a cupcake.
  5. Once finished baking, remove from oven and allow to cool.
  6. Once completely cooled, start mixing together your icing by sieving your icing sugar into a mixing bowl. Add in the remaining ingredients and mix with an electric hand mixer until you have a creamy and smooth icing.
  7. Ice your cupcakes and enjoy!
