Carrot Muffins

Carrot Muffins
Easy Carrot Muffins full of flavour, to be enjoyed any time of day.
Time: 30 minutes
Makes: 9-12 muffins

 

Ingredients:
Dry:
1 ½ cups cake flour
1/2 cup sugar
2 teaspoons baking powder
Pinch of salt
2 carrots grated
1/8 teaspoon nutmeg
1/8 teaspoon cloves
 
Wet:
1/3 cup of oil of your choice
1 cup plant-based milk
1 teaspoon vanilla essence

 

Directions:

  • Preheat your oven to 180°C and line your muffin tin.
  • In your mixing bowl, add all of your dry ingredients and mix.
  • Add in the wet ingredients and combine.
  • Scoop evenly into your muffin tray.
  • Bake for 18-22 minutes.
