Coffee Crumpets

Coffee Crumpets
Time: 20 minutes 
Makes: 6-8 crumpets 

 

Ingredients:
Dry:
1 and 1/2 cups cake flour 
1 and 1/2 teaspoons baking powder 
1/2 teaspoon baking soda
Pinch of salt 
1/4 cup of castor sugar 
2 teaspoons of instant ground coffee 
Wet:
1 cup of water 
2 teaspoons oil  
1 teaspoon vanilla essence 
Other:
Coconut oil for frying 

    Directions:

    1. In your mixing bowl, add in all the dry ingredients and mix.
    2. Add in the wet ingredients and mix until you have a flapjack batter.
    3. Heat up your pan with some oil.
    4. Add in 1/4 cup of the mixture into your pan to form a crumpet.
    5. Cook on medium heat and cook until bubbles form. Flip and cook for another minute or so.
    6. Repeat with the remaining batter.
    7. Serve with some icing sugar, strawberries and maple syrup and enjoy!
